Salt free bread

Flour (type 55)500 g
Cold water285 ml
Fresh cubed yeast15 g
Sunflower oil7 ml
Lemon juice10 ml
Sesame seeds80 g

Instant dry yeast equivalent: 5 g

Sesame seeds and lemon juice lend this bread a particular flavour to detract from the lack of salt.

  1. Mix the flour, oil and lemon juice in a bowl.
  2. Stir the water into the yeast and add to the bowl.
  3. Blend with a spatula for 2 minutes and add the sesame seeds. Mix again until you have a smooth dough and finish by kneading with a rolling pin.
  4. Shape the dough into a ball, put it back in the bowl and cover with a cloth. Leave to rest for 30 minutes in a warm place.
  5. Take the ball of dough, divide it into 2 equal pieces and leave to rest, covered, for 10 minutes. Shape into 2 short loaves, place them on a baking sheet and leave to rest, covered, for 1h.
  6. Make a slash with a knife along the entire length of the bread to enable the dough to rise properly.
  7. Put the loaves in an oven pre-heated to 230°C and bake for 22 minutes.
