What is the difference between fresh yeast and instant dried yeast ?

Fresh yeast contains water. It comes in a white square cake, it is very crumbly and therefore can be broken up easily. It is kept in the fridge at a temperature of between 0° and 10° C.

Instant dried yeast is a fresh yeast which has been dehydrated and comes in the form of granules. This yeast, packaged in 5 to 11g sachets, keeps for 2 years.

There is also a so-called 'rehydratable' dried yeast. This type of yeast involves more complex handling, as it needs to be mixed in a little lukewarm water (or milk) before being incorporated into the flour.
