Should I use my fresh yeast differently according to whether I am kneading by hand, in the blender or with my bread machine ?
By hand :
- Measure out the amount of fresh yeast stated in your recipe.
- Crumble the fresh yeast directly into the flour.
- When kneading: start kneading by hand, then finish with a rolling pin. Roll out your dough to create a rectangle. Fold the edges (top and bottom) into the middle. Give your dough a ¼ turn and repeat the operation 5 to 10 times depending on the consistency of the dough.
In the blender :
- Measure out the amount of fresh yeast stated in your recipe.
- Crumble the fresh yeast directly into the flour.
- When kneading: blend for 3 minutes on a slow speed and then for 10 minutes on a fast speed (speed setting no.2) to obtain a well-blended dough.
In the bread machine :
- Measure out the amount of fresh yeast stated in your recipe.
- Stir a little milk or lukewarm water into your fresh yeast.
- Follow the order in which to incorporate the ingredients carefully, as stated in the recipe.
- When kneading: select your programme and follow the instructions in the user's guide.
