2. Shaping your baguettes

  • Dust your hands with flour to prevent them from becoming too sticky and gently remove the dough from the pan.
  • Shape the dough into a ball and divide it into 4 evenly sized pieces.
  • Take a small ball of dough: flatten it out with the palm of your hand on a floured surface in order to obtain a rectangle.

  • Fold the rectangle twice, press down the dough, then make sure the join is at the top.
Repeat this operation to perfect your rectangle.
  • Then wind the dough around your thumb, while pressing the join with the palm of your other hand. Repeat this operation 3 or 4 times in order to obtain an evenly formed baguette equivalent in length to your baking receptacle.
  • Then roll the baguette back and forth and repeat the above operations to make each of your baguettes.

  • Slash the top with a blade or a serrated knife.
  • Finally, in order to obtain lovely golden baguettes, moisten them with a brush.
  • Place them on your baking receptacle in the bread machine and press the 'start – stop' button to start baking (55 minutes).
  • When the machine beeps, remove your baguettes.

3. Paneo's tips

> Adding flavour to your baguettes, or your own personal touch to the recipe:

  • Add your own choice of ingredients during the kneading stage, a beep will sound to let you know when you can incorporate them: sesame seeds, cereals, or even cheese, walnuts, hazelnuts, olives or lardons.
  • Chop them finely before incorporating them into the ingredients.

> Adding a more 'Mediterranean' flavour:

  • Incorporate a little olive oil into the dough (1 coffee spoon, according to your taste) and baste your baguettes before baking them!

> Decorating your baguettes and obtaining spectacular results:

  • Prepare your baguettes in the traditional way, moisten them before slashing them, then roll them in the seeds of your choices: poppy, linseed, sunflower or sesame.

> Recreating the 'wheat sheaf' loaves that you see at the baker's: it's so easy!

  • Use some scissors to slash the tops of the baguettes every 2 or 3 cms (make bold incisions).
  • Then open out the sections from right to left along the length of the baguette to create a wheat sheaf shape.

> Decorating sweet baguettes:

  • Again using your scissors, you can make smaller incisions on the tops of your baguettes: the effect will be guaranteed for all your sweet buns or brioches!
