What is 'dietetic yeast' ?
Dietetic yeast is a yeast that has undergone a specific treatment during its manufacture. This process helps to improve the yeast's digestibility while preserving :
• proteins rich in essential amino acids,
• vitamins, notably B-group,
• mineral substances rich in phosphorus and potassium,
• sugars.
However, this process destroys the fermentation power of yeast; therefore it cannot be used for bread-making.
